Fudge Recipes (especially for you Lydz)

You have probably seen these ones before, Lydz, they are in the Edmund's cook book, but I find they work wonderfully.




Chocolate Fudge

1\2 cup milk
2 cups sugar
25g sugar
1Tbls cocoa
vanilla essence

Put milk, sugar, butter, and cocoa into a saucepan and bring to the boil. Boil for FOUR minutes. remove from heat, add vanilla. Beat with electric mixer until thick and pour into greased tin. cut when set.




Russian Fudge

1 1\2 cups sugar
1\4 cup milk
1\4 tin condensed milk
60g butter
salt
1\2Tbls golden syrup

Put sugar and milk into sauce pan mix thoroughly and slowly bring to the boil, add condensed milk, butter,salt and golden syrup. Boil 1\4 hour stirring constantly. Take off heat and beat with electric mixer till thick. Pour into greased tin. Cut when set.



And this one I found in a recipe book from the library a while ago.

Grandmas old Fashioned Fudge

2 cups sugar
2 cups milk

Place both ingredients in a saucepan and bring to the boil. Boil to the 'soft ball' stage. Take off the heat and beat with wooden spoon till the mixture has lost it's shine and is quite thick (this could take a while). Pour into greased tin and cut when set.

I find this one is a bit harder to get right, but I hope you all have fun trying them out!

thanks Livi! I like the look of that condensed milk fudge - it gets a caramel flavour, so good. I've never heard of fudge made from just milk and sugar, that's impressive.
*is getting ideas* a plate of this would be great for a christmas present :)

Oooo...I love fudge. Especially peanut butter fudge. Yum!
